With Ash's Pikachu, I am 100 percent sure that it is a boy Pikachu that anything else. He has referred it to the following examples:
In DP061, Pachirisu, Piplup and Buneary are cheering for Dawn in cheerleader outfit, while Pikachu is wearing a male kimono. This may suggest Pachirisu, Piplup and Buneary are female, while Pikachu is male.
In DP062, it and Turtwig also look embarrassed being in maid outfits, much like Ash himself is, which may indicate that both Pikachu and Turtwig are male.
Some also cite a crush that Dawn's Buneary, who is female, has on Pikachu as proof.
Ash has referred to Pikachu his, "Buddy" in numerous episodes and movies.

I would say a boy. It makes the most sense. Buneary's big crush on it, and they've referred to pikachu as "he" serveral times, i'm pretty sure.

Definelty male. There are many times where it is hinted that it is a boy and if this was a debate I would take the time to find them. But the ones you have listed up there are all valid so they will do.

Might I just point that his Pikachu was produced during the first generation of where they didn't have gender differences? Maybe it started out genderless, but it definetly turned into a guy later.
